Paradiso is a speakeasybar hidden behind a fridge door in a Pastramy Bar, based in the born area of Barcelona. When you open the fridge door you feel involve in a mix of Hospitality, creative design with wood waves on the roof and carrara marble on the bar, shine menu, great atmosphere. Giacomo Giannotti, Bar Manager of Paradiso, will bring that atmosphere from Barcelona to the BAROMETER on September 28-30. But we decided not to wait and already asked him a few questions.

How many glasses a day do you usually serve (on busy Friday)?

About 400 drinks.

I’m not usually a drinker.

What is the funniest cocktail name you ever heard/invented yourself?

Supercool Martini, Where is the Daiquiri?, Hugo Sanchez.

What is the most popular cocktail in your bar now?

The Great Gatsby, a variation of Old Fashioned with truffle honey and lavander bitter, smoked with chocolate and vanilla tabacco.

What is the most unpopular (underestimated) cocktail these days?

What was the weirdest cocktail you ever made/tried/saw in your life?

A cocktail with a sweet and sour sauce from Thailand, it was very weird.

What is your ideal guest? What would he order?

An open-minded person, traveler, he would order some of the cocktails from our menu or he would let us drive him.

What would you like to invent?

Something new and memorable for my guests.

What is the best part of bar tending for you?

Sharing with guests or with colleagues around the world, moment-knowledge.

What have your job taught you?

That you never stop learning.

Go to sleep late, ahahah.

Handle difficult situations behind the bar without other’s notice.

Italian rock-pop or electronic groove.

Playing football or some sport in general.
